I have not played since 2009 I have no idea what is good gear endgame, because my main is around 55. Do I have to pick my 10 items now if I make a character or can I do this later when I have an idea what I want?

I was also wondering if I want to move my main to this server do I have to be 75 or will you guys just copy my character over with the levels I currently have. Does this include my gear and my weapon skill levels or just my job levels? I looked on the site and forum, but never saw an explanation.
